I'm a huge fan of the Reese family of products. I've never had a single issue with any of their products over 40 years of towing. Their website is a bit weak with product details, but the online catalog is a wealth of information about how to choose the right balls, offset, weight ratings, etc.

Offset is not one size fits all. It's a function of the trailer height. In most cases, you choose the offset that makes the trailer level. This is especially important with tandem axle trailers to prevent uneven tire wear between axles. I've got 3 different hitches to work with my different trailers. No, I am not a believer in "Swiss Army Knife" hitches that have multiple balls, adjustable height, etc.

Like @Zoidz said, a ball mount has to match your trailer.

I am running a Class 3 ball mount, 6" drop Curt with a 2" ball for my 6x12 trailer. Works like a champ!
