Thats all fine and dandy for while parked... I want something to cast to the rear screen(s) for the kids while driving!
Maybe it’s just me but this seems like an inelegant option when phones and tablets exist. I don’t want to have to adjust my listening while driving to prioritize back passenger’s entertainment on a tiny screen.

I wonder if casting a browser will work, that might open up more options like A Better Theater but for me I'd still prefer to be able to cast offline synched content from Plex or Fuse without requiring the AT&T connection.
I mentioned the new possibilities to my kids this afternoon and they immediately said they couldn't wait to see the Chick-fil-A app on the screen. I told him that Dad app was not set up for Android and they quickly reminded me that our Samsung phones allow mirroring to all Google cast and fire TV devices.

Of course screen mirroring and browsers and those apps would not be the best experience as purposely designed apps but I think it should work.

On the Wi-Fi hotspot I don't think that they are requiring you for the Wi-Fi hotspot for the data connection from the cloud but simply using the router as the receiver from your phone.

It's been pointed out elsewhere that the R1 lacks a satellite receiver antenna, and probably a receiver as well but Sirius XM has a streaming service. I enjoy the variety content on SiriusXM.

What is limiting
The satellite is 155 miles above the Earth. It can only look straight down, That''s a bit limited, isn't it?
Actually what's limiting is the lack of a satellite antenna and receiver. If there was hardware the satellite connectivity works well, even in places that lack LTE connectivity. But I am referencing Sirius XM's streaming app, not satellite.

If they enabled the CFA app on the rear screen while driving I would very quickly become destitute and be forced to sell my Rivian.

What I find amusing is the FM radio antenna is so bad that I wonder if its even connected.
No great loss if you can't pull in FM.
Have you listened to FM sometime during the last few years? 59 min of idiotic commercials followed by 1 min of compressed/clipped music. Unless of course you're talking about NPR which isn't recommended for driving due to it's sleep inducing properties.

Wow, people scream and beg and cry for video apps, and then Rivian says here have Google cast so you can cast from any streaming app without us needing a native app, and the response is everyone screams and cry's it isn't good enough. Y'all suck. This is going to make charging so much better, or really any time you spend time in the car which ends up for me at least being more often than I expect (slow ass partner....)
That was what I pointed out in the last software update. People screamed for more capabilities in the rear screen. When they get it people complain about how the driver can't use the rear screen so it was a waste of an update.

Rivian should not integrate CarPlay or Android Auto or Tesla FSD or anything else that places maximum dependency + risk on third party software.

Integrating Cast is a compromise solution that pretty much works for everyone. For Apple users, what's the difference between pressing AirPlay vs Cast buttons on media playback? similar icon, same screen.

Meh. Google? In my car? No thanks. I steer away from all things Google, whenever possible. Having said that, I do spend a fair amount of time on YouTube.

If they just let you do casting while on the move,
Off topic, but back around 2013 The Count observed a 1978 Cutlass in the south bound lane of the Las Vegas airport tunnel with a tablet installed on the dash. The driver was playing/watching a 1980s era porn movie.

Apps like plugshare and OnX would be useful as supplements. All my cars can play video/movies on their NAV screens, including my 2007 GX470 and the Rivian for that matter. I pretty much never use it.
