Driving car in shipping mode?

Does anyone know what I lose by keeping shipping mode on 24/7?

I went on a business trip and put it in shipping mode thinking no one would drive my car, and found out my wife drove my car. Not a big deal, but she didn't say anything looked off and she used the key fob.

Got me thinking of why I wouldn't keep it on all the time...

I don't think Rivian has detailed out the difference in what the mode does.
