I agree with everything he/she said. Why does everyone get their feelings hurt when someone complains about something? That's worse than the complaint itself, which I found pretty funny. The table was pretty lame, but I'm not taking my ball home or canceling my order.
OP seems to be the only one with hurt feelers. 900 angry, foaming at the mouth temper tantrum words to say “that table I saw one picture of from a thing I wasn’t at was underwhelming“ is a bit much.

You know why? Because compared to a litany of valid complaints or concerns, this is the dumbest shit anyone can complain about.

It makes the OP look like a knobber for missing the forest for the trees.

It isn't the complaining, it's the vehemence of the complaining.
I agree about the vehemence and I’ll add the people declaring what is right for others in subjective likes, dislikes, and observations really rubs some people the wrong way.

That is all I'm trying to bring attention to. The fact that Rivian is "getting by" with a display like this, this close to delivery, to demonstrate their colors is unacceptable.​

Clearly, the OP places a lot more importance on this issue than I do, and probably a lot of other readers, too. Just declaring it unacceptable for everyone, everywhere without any qualifiers makes this objectively incorrect. I know it is incorrect because it doesn’t bother me one bit so it renders the entire statement false. I think it is safe to say there are others here who think the same thing.

Preferences don’t always work in objective statements unless you qualify them, like I did above, or turn them into purely factual statements. For example, there is a difference between saying, “The R1S is too short and Rivian should have used the R1T dimensions for the R1S.” versus, “If Rivian made an R1S based on the R1T dimensions it would provide more usable space inside.” I may think both statements are true because of my requirements, but to others only the second one is true. If I make the first statement I lose credibility with some people, but if I make the second one everyone should be able to agree that it is true regardless of the reader’s needs: if you make the passenger compartment bigger there will be more space inside. Whether that is a good thing or not (too big/too small) is up to the individual.

tl;dr If we try to inflict our preferences on everyone else then some people will think we lack credibility because we don’t correctly speak for them.

The CMF table is very typical in the automotive design space. The intent is not only to show the colors and textures themselves, but also to show the inspiration behind those decisions. Lets not forget that that this is also the Rivian team's first go at this, and we shouldn't necessarily view them through the same lens as more established auto manufacturers.
