Leasing Model 3 until R3X comes out, but now I have an R2 reservation as well.
The R2 has more off-road chops than I thought it would, or this a standard test for all vehicles?

Standard for whom? Every manufacturer has different criteria (and product promise) for each product line. And as for the R2, if you are aware of Rivian's brand position, this test shouldn't be a surprise.

There is also a blurb later on about giving the horn a few short blasts—to purge it of ingested water afterwards—so the internals don't rust and become defective.
The Slow-Mo Guys posted a video 5 years ago of the Apple Watch using sound to clear the speaker chamber after disabling the Water Lock feature.

Obviously we don't know exactly what they were testing with the R2 in that scenario, but the water didn't seem very deep at all. Barely crested half the wheel. What's that...like 15 inches?

Vs. the R2 which is like 40something inches.

From past discussions, R2 is 66.9" tall. Water level looks to be at top of front bumper. Based on images available, top of the bumper is about 36% of total height. So, about 2' for water depth.

However, this probably wasn't to test max fording depth. Rather, effectiveness of door seals.

as was said, wheels are 32 inches so water depth in this video looks like half of that (the wave in front is bigger of course) , that's less than Rivian's oficial number 19,7". Other lower sitting electric vehicles have got about the same official wading depth: Subaru Uncharted 19,7", Jeep Compass electric 18,5", Audi Q4 e-tron 19,7", Volvo EX30 Cross Country 19,7" etc.
