Thinking about the options for these vehicles let's discuss how we are going to configure ours...

Based on what I "think" I know... This is my configuration.

R1S 180 kWh
Color - Decidedly UnDecided (Charcoal Grey might be my first choice though if available)
Electrochromic Glass Roof (at least I'm leaning this way)
Full Skid Plate Package
Receiver Hitch
Factory Tinted Glass on the all windows behind the B Pillar.
Launch Edition Package (Would at least like to know what this includes)
Roof Rack Rails (guessing they will be an add on)
I will probably get whatever the best optional sound system is as well but expecting it to be well equipped.

So.... How are you going to configure your R1T/R1S?

At this time I would go with:
R1S 180 kWh depending on the actual range numbers and actual cost.
Color blue or green (I want to see the blue in person before deciding)
definitely want a 2" hitch
Everything else will be highly dependent on cost versus perceived value.
Also, I really want to actually test drive one before I buy.
I'm leaning toward more features rather than less, but we will see when I actually have to pay for them.

R1S 135kWh
3rd row
Likely electrochromic glass roof
20" black wheels (versus 22s on R1S prototypes so far)
Likely white, maybe a flat gray or tan
Black Mountain interior
Definitely premium sound

@cohall @Godawgs , last info on roof options includes:
Fixed glass
Electrochromic glass
Fixed metal
Removable composite

No "regular sun roof"/moon roof, unless things have changed.

I thought there was some discussion recently indicating they may be having second thoughts about the removable composite roof? I don't think they had given up on it completely, it was more like they weren't happy with some aspect and were evaluating whether to offer it or not.

Can’t decide between Green, Blue, Burnt Orange/Copper (whatever the color ends up being)
Lunar Rock interior
Electrochromic roof
The wheels with the carbon inserts if they make it to production
Roof rack set
Camp kitchen (maybe)

Since those comments, which I believe were made at an event, Rivian released this on their FAQ under products:

What roof options can I expect?

We will offer multiple roof styles including electrochromic glass (which turns from opaque to transparent on demand), a fixed glass panel, a two-piece removable composite roof and a standard fixed roof.

Given I live in Aus and there is almost zero charging infrastructure, I would go with the following;

R1T 180kw
Rivian Silver (I'm not impressed with the colour options, but I like the default silver for some reason - I want a color that isn't going to stick out when I'm camping but I'd like it to not be black as black is a PITA to keep clean - or I'd go the other way, Tonka Truck Yellow with matte black trim)
Fixed Metal roof (Due to sunlight here being harsh and I don't want to pay extra for the roof)
Black Mountain Interior (are there pics of different interior trims already?)
Camp Kitchen
Kangaroo/Bull Bar + Winch
Power Tailgate/tonneau cover
Towball hitch + Tow points
Skid plate
Hard tonneau cover with an on-roof pop up tent (ie this pic)
https://s.aolcdn.com/dims-global/di...5/slug/l/rivian-r1t-modular-pickup-beds-1.jpg
240v outlets
Air compressor

I wouldn't want a factory tint, unless they could get it to the maximum legal darkness in my state.
Would also be interested in locating the full sized spare underneath the chassis and turning that empty space into water storage. 100lt+, hook it into the camp kitchen plus an outlet so it can be used as a camp shower

Anyone have a guess on what the tow package would run on the R1S? What's a comparable package on an f-150?

Everything else will come down to pricing as money does not grow on trees for me.
