21" Lug Configuration - why?

They are exactly the same. My truck came with 21's, I now have 20's. There no difference.

Just be aware that the 20's are 1" taller vs the 21's and with the latest OTA my speedo is now reading 1 mph slower than I am actually traveling. I have an appointment for reprogramming the truck tire size in October. That should correct the speedo.

Just be aware that the 20's are 1" taller vs the 21's and with the latest OTA my speedo is now reading 1 mph slower than I am actually traveling. I have an appointment for reprogramming the truck tire size in October. That should correct the speedo.
I don't plan to get the 20" ATs. I'm going to get a set of winter tires on dedicated 20" rims for winter camping and skiing. I'll either find a set with the aspect ratio that gives me the same diameter as the 21s, or just accept the 1 mph difference. for our Model X with 20" tires, we've been using a dedicated set of Blizzak snow tires on 19" rims (TireRack.com) since 2016, and it's worked out very well. It also gives me a chance every year to remove the corrosion and re-lube the brake calipers.
The difficulty with the R1S will be finding the snow tires with the correct load and speed ratings.

When searching for wheels online by bolt pattern, I didn’t feel there were fewer options for the 5x5.5s. What makes it impossible to find Rivian wheels is the insane offset, the weight rating and choosing a design that will fit over the brake caliper.

Don't know yet. The large offset required by the Rivian is going make the search a little challenging. But like with Teslas in the early years, TireRack and others stepped up to the plate when the number of Teslas ramped up. I predict the same will happen with Rivian

There were a set of 20's for sale on Facebook marketplace. Not sure if they are still there, but they were there a few days ago. A little pricey at 4k for the set.
