Has anyone seen a different lens or defuser for the cabin light to not blind the driver?
The angle of the lens, makes it blinding when you put the truck in park. Most vehicles point down, not at the driver.
Despite all the requests these will make poor camper vans. It's just not designed for it. Maybe rivian will focus on that in the future but for now the best use is defined deliver routes in semi urban areas.
Hummer is probably a 800v vehicle with only a 50kw 400v->800v up converter? Very few chargers support >50kw without supporting 800v. Tesla is one of them.
It's a feature, not a bug. 120v plug on the Rivian EVSE is limited to 12 amps for safety reasons as they do not give you a 5-20 pigtail.

But, I'd recommend...
A small subpanel can solve this; although if you only needed 2 and you can mount it in the same spot, you can also just get a clipper creek 2-headed unit.
