I am still researching this; a few minor things I've found that I think are getting me closer to the goal: XT60 cables are limited to 8A. But the XT60i can handle 15A. Which is important because the Ecoflow Delta Pro can take up to 15A (at anywhere from 11 to 150V, subject to the 1600W limit)...

My power was out for 3 days. Not all went as I'd hoped, but I was able to use the truck to replenish some power banks that I was using to power the whole house like a generator. More details in THIS thread. BTW the issues I had were with the power banks, not the Rivian.
