Now if the truck is lifted 2 feet then you could see a more severe >20%…

At ~$282 per tire, the Hankook iON HT (EV) – 275/65R20 (116H, 900AA) looks like one of the strongest value plays right now in the 34" OEM category.

Update: After 8,000 miles the tread is wearing at a reasonable rate, this set should likely get 25,000 to 30,000 miles total (unless the wear rate increases in the summer, which is likely). The efficiency over 8,000 miles is 2.35 MPK.
I traded in a 23 Quad for the 26 DM. My biggest gripe is that the range behavior (guessometer) is markedly different than the Quad. Somewhat amazingly the Quad was usually accurate within 1-2 miles on a 100 mile plus trip. The DM LFP range behavior is more like Tesla where there is a downward...

Since you want 3PMSF, suggest you stick with the Goodyears and keep the 116H XL rated tire which meets Rivian spec. But, it would also be great if you tried the BFGs (without 3PMSF), do they have a 30 day trial where you could return them if you wanted to? I think you will end up with more...
HTS60 (34#) is most efficient, may be others that are very close. LL75 reported they are 2-3% more efficient than the 21 OEM.
