Why do I sometimes get a notification that reads "turning on HVAC to protect screens" but other days like today the cabin was 140f?

I have zero evidence to substantiate this theory, but I had a friend who speculated that it is not tied to ambient temperature in the vehicle, but rather surface temperature sensors that could possibly be located on the screen. So it's not triggered necessarily by the car interior being hot, but rather direct sunlight on the screens heating up the surface.

But again this is unsubstantiated speculation

This is my speculation as well. But still seems inconsistent. It's not as if I park when the screens in direct sunlight

Adding another unsubstantiated anecdote.
If I remember to put the sunshade in my windscreen, I don't believe I've seen the truck run the cooling at all.

If I forget to put the sunshade in the windscreen, it'll come on several times for several minutes at a time.

This adds plausibility to the theory about sun and radiant heat directly affecting the screens. The rest of my windows are all tinted with Lumar ceramic coated UV and IR rejecting film.

This is a great question. I get the little thermometer showing up in the app with a message that the interior is hot, and have seen it as high as 140, but I have never (to my knowledge) seen or heard the HVAC kick on nor gotten the protection verbiage in the app.

Since devices like phones and iPads use in-screen temp sensing to manage heat, it would only be logical to assume that the car screens are this smart. Since I park in the sun, I get this, but only when the car is actually in direct sun through the windshield.

Right but if its turning on the HVAC in some cases, it's Because these devices do not have their own cooling ability, you would assume ambient air of the cabin works like an oven to drive up the surface temperature of everything in the car including the screens.

My R1S, with Ocean coast gets hotter than any other car I've had. I park on an uncovered driveway , where the sun directly passes over the car from the rear to the front. And have seen cabin temperatures near 150F and it not have any screen protection and other times when its 115F and have screen protection. Just seems odd

None of that behavior seems odd at all to me. So many variables. Also I just had a windshield film applied, which in our Tesla, reduced the inside temps by 35 degrees or so. Looking forward to the results when it's 107 later today.

I don't know what part of that is strange to you, I see it regularly here.

I’ve never once had “fans running to protect display”. Even at 140+. This is all I ever see:

It's just the inconsistency that is odd.
Weather, sun, and such are inconsistent. Today my interior is not very hot, fans not running. Hey, maybe it's the new windshield tint working? Look outside, nah, just overcast with a breeze to cool things.

Honestly when I see it seeming to be random, I think I also find it relative to the weather and time of day (whether sun is direct or not).

Mine vents the windows and cranks AC when parked in my garage on hot days.
