Rivian has resticted Slate Sky and Walnut Interior to specific colors; any way around this?

Two options. Tell Rivian what you want and tell them you won't order until they offer it or order a silver one with the interior you want and have it wrapped whichever color you want.
Three options. Buy two vehicles and swap the interiors.

That’s true. But I’m really curious why. Why do manufacturers restrict those combos!?
People have explained that earlier in this thread about inventory, being left with combinations that the typical buyer doesn’t want etc.

Some manufacturers, Porsche for instance, allow just about anything to be ordered for a price (and long wait). Many years ago someone’s ordered a 928 in bright green with a purple interior and green seatbelts. Buyer walked when it was time to pick up. It sat in the dealership for a very very long time as a curiosity. Eventually sold only to become a valuable collector car.

I guess you could try and offer to pay the full price upfront, including a premium for Rivian providing a "one-off" build.

Putting in a custom order, I want the Slate Sky and Walnut Interior but it is no longer an option with Rivian Blue or Canyon Red. What is the point of a custom order if you can't get what you want? Any way around this?
lots of manufacturers do this, grow up.

Yes, and with good reason as has been mentioned.

I seem to recall that GM used to have an RPO code which allowed customers to pay extra for an off-standard combination. Maybe they still do? It was officially called the “Color Combination Override” so if you ordered an orange or yellow Corvette you could pair that with a red interior, as an example. I saw at least one person refer to it unofficially as the “Taste Delete” option.
