Does anyone have insight on what the final design of the back windows on the R1T will look like? In some of Rivian's photo's/videos there is a "split" in the rear window, while in others it's just one solid piece of glass. The one piece version is my preference, but it's not a deal breaker kind of thing.

Rivian has confirmed there will be no split. The Long Way Up trucks are more recent design than the traveling prototype show trucks.

That one piece rear window will not be able to roll all the way down.

Actually, it will. I spoke to RJ at the Seattle event on that exact topic and he mentioned that is was important to them to make sure that the window did, in fact, come all the way down.

Whoa, this is an important detail. When I spoke with Brian Gase, who's the chief engineering guy for road show events, at Mill Valley/SF, I recall him saying the real window can't come down, as that compromises the gear tunnel.

I don't think it's a RJ said/BG said situation. It's one or the other. Can anyone else with first-hand information chime in?

No, not THAT window. They're talking about the rear door window.
