I was playing around with the ChargePoint app and tried adding a Rivian to it. I think this is the first I've seen a Max Pack configuration for the R1S in writing before.

Given they have a partnership with Rivian I'd expect they'd only add configuration options that Rivian has confirmed with them?

As cool as this is, I believe they already stated that the R1S Max Pack won’t be 180kWh.

Oh really? I must have missed that. Was there something official announced?
It's been stated and is implied in the FAQ:
Rivian R1T R1S Evidence of R1S Max Pack 1631925863764

They reference the Max Pack for the R1T but refer to a "longer range" R1S.

They dropped the kWh designation long ago.

Since they no longer identify the packs in KWH, this is meaningless and probably based on old information. Nothing to see here.

Assuming there is indeed a max pack (whatever kWh it might end up being) for R1S, does anyone think it will delay delivery of a non-LE preorder if chosen?

Sadly, I think it will.

In the configurator currently for R1S you can only choose large pack. The small and max are not options.

This is also the same thing a CS agent told me about 2 weeks ago. I was asking about max pack R1S timing, and she kept referring to it as the "longer range R1S." It's believed that since the R1T is 217" as opposed to the R1S 202", there's not enough room for all the batteries to make a 180kWh pack. There was a good post on this forum that showed the layout of the battery pack and the extra space with the large pack in place for both the R1T/S, and you could see the difference. I think the speculation is the "longer range R1S" will have in the neighborhood of 370ish miles?
