After I brought my R1T every time I plug in my wall charger my home wifi goes dead - I have cruddy ATT uverse internet. So it wasn’t great to start with. Anyone else experience this? Do I even need the wifi enabled?

I do not have that problem.

If you don't care about seeing charging stats in your Rivian app, then you can disconnect the wifi. If you really want to keep the interference down, you can unplug the wifi antenna in the EVSE by removing the cover and unplugging the harness.

No issues for me. Wouldn't expect any at home with my Xfinity high speed service. But my Viasat satellite service I use at my camp is pretty crappy to begin with. Can't say I have noticed a difference there since I got my truck.

Can you elaborate?
Are you plugging into 110 or 220?
Do you mean the Rivian vehicle cannot connect to your household wifi?
Can other wifi devices connect to the house wifi?
Can other wifi devices connect to the Rivian wifi?

Is the house wifi hotspot connecting to other devices?
Does the wifi lose connection to the Internet?
Does the wifi disappear from other devices?
Does the wifi lose power?

Does the charger interfere with the wifi when plugged into the wall without being plugged into the Rivian?

A first guess would be power line interference. Not likely, but not impossible.
Assuming an older house, the breaker panel could be noisy.
Put the wifi or the charge connector on separate circuits in the house.
A line conditioner would clean up the power to the wifi hotspot device and shield RFI.
I don't think there's possible wifi radio interference.
