Picked up my R1S about a week ago and in case anyone is interested, below is a list of accessories I found very useful in my R1T and bought again:

I picked up his Tow Hook License Plate Mount as well in anticipation of my R1S's move to Hawaii.
New Accessories I'm also trying:
@EV Sportline - 20" Aero Covers in Satin Black
@LinerX - Rear Cargo Liner
A few photos are below and some initial thoughts:
- I truly hate the brushed nickel window trim on the R1S. It's visually distracting and adds no value. It's getting blacked out when I wrap the car in a few weeks.
- I need tint really, really, really badly in this heat.
- I did a quick interior detail and used Wolfgang Cockpit Trim Sealant on all the seats, dash, and doors
- I put C-Quartz on the exterior plastic trim as well.
I'll have tint and a full wrap (strongly considering stealth) done later this month. That was originally scheduled for later this week, but Rivian will instead be getting the R1S to replace the cracked roof glass.
Anyway, just wanted to share what products I've found useful so far. Hope it's potentially helpful to new owners.
