Same issue. Gen1 R1T on 20" ATs. The sound only appears in high suspension setting when accelerating at >70% power. The SC said it's normal and didn't do anything about it.
I have the 275/65/R20 size, so 34." I have them because while snow socks are amazing in snow, they provide no additional traction on ice. The chains have worked very well in icy conditions, but like I said, you have to go slow to avoid damage.
I have a set of low-profile super Z8 chains that I run on the back tires. However, they will begin to make contact with the wheel liners above 20 mph, so they are only useful when you don't mind going slow. I also have socks for snow-only conditions or mountain pass use.

I had my 2022 Gen 1 R1T in for service recently and got a late Gen 1 R1S quad as a loaner. No difference in motor noise, but the "tock" that I've gotten used to on my truck wasn't present, and the pedal tuning/motors were much smoother at lower speeds.
I've used the SCC Super Z8 cables on my truck at low speeds while off-roading without issue, despite having the largest wheel/tire combo (275/65/R20) and Rivian recommending against it for that size. I mounted them on the rear wheels and didn't exceed 20 MPH - which seems to be the speed limit...
I've sent this in via the software bug reporting feature in the app. (This is under the "Share Feedback" link when you scroll to the bottom.) This is what service will tell you to do if you contact them about it. I'd recommend others do the same so it gets the attention of the software team :)
I've had this problem constantly with my Gen1 R1T. I've tried setting the limit multiple times via the truck and via the app with no success. The limit doesn't seem to stick, no matter how/where I set it. Really hoping it gets fixed in the update.

Glad the tires have worked out for you! They're by no means bad tires - the added weight just tips the vehicle dynamics too far into "truck" territory for my taste.
I will say that after comparing these back-to-back with the OEM Pirellis, I have more appreciation for the engineering and testing...
