My "micro-kitchen" is evolving ... using the 3 drawer cabinet + the small box for the middle to hold 2 gal. of water ( converted two one gal. jugs of apple juice).
The other half has a tray for groceries, Instapot™, etc. I made my tray out of wood.
After trying 3 different induction burners, I now have an Itrusou hot plate. Not field tested yet, but it does seem to work in my carport.

I, too, had cruise control just quit while driving on I-25 at legal speed and a light rain causing lots of use of the wipers. At the instant of cruise control quitting, the full re-gen braking kicked in and I quickly had to manually press the pedal to keep going. Seatbelt was on ... no doors...
Geography also plays an important role. It is my understanding that LiPo batteries should not be charged below 0ºC/32ºF. Unfortunately, Colorado often has temps well below those numbers.
